I love grammy’s cupcakes.

Josh and I had my parents, grandparents, and grammy over this evening to see our apartment since only my parents had seen it before. We watched our wedding video on our big projector screen, too. Yes, we finally got our wedding video. It only took a year to get it. Part of that was my fault because I couldn’t decide what songs I wanted in it. I finally decided and then it took however long it took to get done.

We made BLTs for dinner and had some fruit and cake for dessert. My grammy brought us some homemade cupcakes. I indulged myself in one of those but I was so good all day that I actually could fit it in to my day.

In fact, I’ve been doing TOO well on my new diet the past two days. I am shooting for eating about 1200-1350 calories per day because any less than that is not healthy either. Yesterday I only ate 840 calories and today, even with the cupcake and the BLT, I ate 700 calories. It has actually made me quite frustrated. It seems I’m either eating 4000 calories in a day or I can’t eat enough for the day. I’m going to keep at it, though. I’m sure that as I go along I will learn to keep better track and be right around the goal.

  2. Are you still doing the vegan “thing”? Sorry, I don’t know what other word to use :P Was just curious because of the cupcakes! I need to start eating less calories as well…I think I am going to buy a small journal to keep track of everything. My major habit to break is drinking pop :(

  3. Wait! I’ve been away for a long time on vacation….. are you no longer a vegan….? what happened? those cupcakes looked really yummy!! I would have cracked too just to eat one. I love the way they are frosted, with only sprinkles on the edges, very classy!

  4. Oh, those cupcakes look absolutely delicious (they’re making me crave chocolate, agh). I’m glad you finally got your wedding video – my uncle and his wife waited around a year for theirs as well, and over a year for their photos. Good luck with your diet! You seem to have much more willpower than I’d ever be able to.

    Those cupcakes sure do look delicious! Mmm mmm mmm. Have you thought of setting up a daily menu for the week ahead and try to follow it? Maybe make sure you include food with enough calories so you don’t fall under, but to keep you from going over?

    I think it’d be awesome if our bodies beeped if by a certain time we hadn’t eaten enough or had eaten too much!

  6. the calorie counting is what drives me insane as well! i’ve been using spark people to track my food and it always seems like i eat too few calories but too much fat! those cupcakes look yum…

  7. Good luck on your weight loss! I know it’s hard, I’ve been back and forth so many times it’s not even funny. I’d like to get back at it one of these days, lol.

    Those cupcakes look so yummy. I’m not much of a baker, but then again my mom does enough baking for both of us. She’s like the frosty sugary queen in my family.

  8. First off, you are doing well with you diet! When it comes watching calories, I definitely lose self-control. I can never watch my calories, just because I’m so horrible at it!

    And your grammy’s cupcakes are so scrumptious looking! I have the sudden urge to lick my screen!! :-P

  9. Hi Caity! I cleaned up my google reader a few weeks ago and swear I still had you on there but was wondering why you weren’t posting. So I came to your site to see all the posts I had missed because I apparently I hadn’t put you back on my reader. Stupid moment for me, haha! Anyways you’re added again, can’t wait to start reading more :)

    I’ve finally got my motivation back and have been eating a lot healthier now. I’m actually trying to stay in the same daily calories, about 1200-1400 a day. If you start adding more snacks, or more calorie dense foods, like peanut butter, you should be able to hit your calories needs for the day a little easier. :)

    I’m afraid of cockroaches, bees, and scorpians more than anything. When I was 4 I had a deadly scorpian nearly sting me, which would have killed me. :/ Vegas is home to dangerous creatures…

  12. Oooo cupcakes!! Thank you so much for your comments on my site, means a lot to me! Definetly make sure to get enough calories because If you restrict too much for too long your body will fight back and won’t “let” you lose weight as I’m having that problem right now and that’s partly why my hormones got messed up in the first place! When I was really “losing weight” I was eating around 1500 calories.. I think the lowest I got was 1400 and now I’m striving to stay below 2,000 and it’s been extremely hard because my body is so out of whack…. ugh.

  15. Those cupcakes look SO delicious! And they remind me that I still haven’t baked anything in my new flat yet, despite having all the ingredients and everything.

    Hopefully you can get the calories thing just right! I always found that when I was trying to keep below a certain amount that I wouldn’t consume enough either!

    Good luck with your diet. It know it can be pretty hard but sometimes it’s a lot easier too, so don’t frustrate yourself as much!

  20. Oh, I remember those low low calorie days when I was trying to lose weight, and all I could think about was food. It was not easy. I finally averaged 1600 cals a day and that was doable for me.

  21. Well done with you’re diet!! At least you’re making up for the extra calories by eating less later on. Hopefully it becomes more equal!! And those cupcakes look lovely.

  22. Over here BLT is bacon lettuce tomato – I’m thinking that’s not what you had…

    Don’t stress too much about calories, remember they’re only an average guess at what a person needs :)
